Terie's Potatoes
8 large potatoes
1 cup grated cheese
16oz sour cream
1 cup chopped green onions
2 bay leaves
1 can cream of chkn soup
1 cube of margrine

boil potatoes with bay leaves
let the potatoes cool
mix all other ingrediants in a large bowl
grate potatoes in large caserole dish and remaining ingredients.
Bake at 350' for 30-40 minutes

Kathleen's Southern Cornbread Dressing.

6 cups of crumbled cornbread
1 chopped onion
4 stalks chopped celery
3 cups of chicken broth
3 eggs
1 stick of butter
2 Tbsp. sage
Salt and black pepper to taste

Saute onions and celery in butter. Add salt and pepper to taste.
In a bowl, add cooked onions and celery to crumbled cornbread.
Add eggs, chicken broth, sage, salt and pepper and mix.
Pour into greased 9x13 pan.
Bake at 375* for 30 to 40 minutes or until top is golden brown.

3 cups flour
2 cups sugar
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. baking powder
1/2 tsp. salt

2/3 cup oil

Measure and mix flour, sugar, baking soda, cinnamon, nutmeg, baking powder, salt, and cloves. In a seperate bowl, lightly beat eggs. Add pumpkin and oil and blend. Add dry ingredients slowly, stirring to combine. Spoon into two greased standard size loaf pans.

Bake at 350 for 55 to 60 minutes, or until wooden pick inserted in center comes out clean.

Cool on bakers' rack for at least 5 minutes but no more than 45 minutes. Remove from pans.

Yields two loaves each with 16 servings.





This is a family favorite. I've baked this bread for a number of gatherings and I've never had leftovers. :) I usually use an extra tablespoon of pumpkin and an extra tablespoon of oil.
