the word hate here is used as a verbal device to show how much one should love and serve Jesus as in comparison to the love that we show to our own flesh and blood. Another example of this use in the scripture is.

Gen 29:30 And he went in also unto Rachel, and he loved also Rachel more than Leah, and served with him yet seven other years.
Gen 29:31 And when the LORD saw that Leah [was] hated, he opened her womb: but Rachel [was] barren.

It wasn't that Leah was Hated in the sense we think of as hate, it was just that the Love Jacob had for Rachel was so great that in comparison what he felt for Leah was hate. This is the love we should have for our Saviour. The love that will say I will follow him whether anyone else in my family agrees or not. A love that is beyond peer or familial pressure.
