In the beginning (Biblically) denotes work being started in a new realm in which time, space and matter would be called into existence. In the eternal realm there is no beginning and no end. So in the beginning of this work, in this new realm, Elohim began a work of creation. This took six days and on the seventh day Elohim rested from the creative work.

On a side note; we know that everything that exists has its existence within the bounds of time, space and matter. This runs parallel with the first verse of Genesis. “In the beginning (Time) Elohim created the heavens (Space) and the earth (Matter)”.

Why did the Eternal Almighty Father, Son and Holy Spirit create?

This can be inquired of, but reverently. We are informed that the decision to create man was collective, “let us make man”. We also know that man was, in his original state, “very good” that the likeness and image were pleasing and a pleasure to behold by the Maker. I think we are on safe ground when we say the decision was collective.
Lets us approach this question "why" from the shadow and list the reasons that are not, rather than the reason.

Elohim did not need company.
The Eternal Father, Son and Holy Spirit did not need someone or something to worship them.
The Almighty didn’t need to impress anyone or anything.
Creation was not a series of events to alleviate boredom.
Creation was not and is not an experiment.
The creation is not a plaything or toy.
Not for fun or as a distraction.
